Lemony Sunrise Parfait

Here's what you need:
1 ½ cups non-fat yogurt
1/3 cup confectioners sugar
2 tsp. grated lemon zest
2 Tbsp. fresh lemon juice

¾ tsp. vanilla extract
1 cup fat free granola
1 cup fresh blueberries
1 cup fresh strawberries, hulled and quartered


Here's how to make it:

In a medium bowl, whisk together yogurt, confectioners sugar, lemon zest and juice and vanilla until sugar is completely dissolved.

Spoon 2 Tbsp. granola, ¼ cup mixed berries and about ½ cup yogurt into each goblet or parfait glass. Top with ingredients in same order and top again with granola.
