Pork Chops

Here's what you need:
8 double thickness pork chops
2 cups small dry bread cubes
1 cup peeled and finely chopped Granny Smith apple
1 cup shredded sharp cheddar cheese
1/2
cup golden raisins

 


1/4 cup melted butter
1/4 cup orange juice

1/2 tsp. salt

1/4 tsp. ground cinnamon

a few dashes of nutmeg

salt and pepper to taste

 

 

Here's how to make it:


Preheat oven to 350°.

Cut a pocket in the center of the chops or have the butcher do it for you at the meat counter. Sprinkle salt and pepper on both sides of pork chops.

 

Combine bread cubes, apple, cheese, raisins, butter, orange juice, ½ tsp. salt, cinnamon and nutmeg. Mix well.

 

Sear the chops on each side in a lightly oiled skillet over high heat. Remove from the pan and let the chops cool so you can handle them. Stuff the mixture into the pockets. Press the edges together and seal, using plain wooden toothpicks.

 

Bake for about 45 minutes and check the internal temperature with a meat thermometer. The temperature should be about 155° and the meat should be pale pink.
