Here's what you need:

2 Tbsp. unsalted butter
¾ cup onions, diced
½ cup carrots, diced
½ cup celery, diced
2 Tbsp. flour
2 tsp. curry powder

 

1 qt. chicken stock
½ cup cooked diced chicken
¼ cup green apple, diced
½ cup sliced mushrooms
½ cup milk
Salt and white pepper to taste


Here's how to make it:

In a saucepot, heat the butter over medium heat, add the onions, carrots and celery and sauté for 5 minutes. Add the flour and curry powder and cook to form a blond roux (thickening agent).

 Add the chicken stock. Bring to a boil and reduce to a simmer and cook for 15 minutes.

 Add the cooked chicken, apple, and mushrooms and cook for 15 more minutes.

 Finish with warm milk and season with salt and white pepper.
