Egg Noodle Pudding with Golden Raisins

Here's what you need:

12 oz. egg noodles
16 oz. cottage cheese
1 cup sour cream
1 Tbsp. butter
1 medium onion, diced

2 eggs
1 ½ cups milk
½ cup golden raisins
2 Tbsp. sugar
½ tsp. cinnamon

 


Here's how to make it:

Prepare egg noodles according to package directions. Drain and rinse under cool water and drain again.

 Preheat oven to 350º. In a large bowl, combine noodles with the cottage cheese and sour cream and set aside.

 Melt the butter in a small skillet and sauté the onion over medium heat until soft. Add to the noodles. Beat eggs in a medium bowl and beat in milk. Add to noodles. Stir in raisins and mix again.

 Lightly grease a 1 ½ quart baking dish. Pour in noodle mixture. In a small bowl, combine sugar and cinnamon and sprinkle over noodles. Bake until firm and browned on top about 55 minutes.

 Serve hot from the oven or cold out of the refrigerator.
