Here's what
you need:
¾ pound cherry tomatoes, halved
2 heads, romaine lettuce, cut into ¼ inch strips
1 bunch chives, cut into ½ inch pieces
¾ cup salad shrimp (or bay shrimp)
¾ cup crabmeat
1 cup toasted croutons

½ cup Parmesan cheese, shaved or grated
¼ cup extra virgin olive oil
1 Tbsp. Dijon mustard
2 Tbsp. lemon juice
1 garlic clove, minced
salt and pepper to taste

Here's how to make it:
Whisk together olive oil, mustard, lemon juice and garlic.
Put romaine pieces in a large bowl, add the dressing and toss lightly. Add the tomatoes, chives, salt and pepper and toss again. Add seafood and toss gently.
To serve, place salad onto chilled plates and top with croutons and Parmesan. |
