Tofu Triangles with Spicy Onion Sauce

Here's what you need:

14 ounces  firm tofu -- cut into 6 slices
1/3 cup  flour
 2 teaspoons  canola oil
 2 cups  onion -- thinly sliced
 1 teaspoon  curry powder
1/2 teaspoon  salt

 

1/4 teaspoon each  cumin, turmeric and pepper
1 cup  plum tomato -- diced
2 tablespoons  cilantro -- chopped
1 tablespoon  brown sugar
1/2 cup  water
3 tablespoons  red wine vinegar


Here's how to make it:

Place the tofu slices on several layers of paper towels and cover with additional paper towels. Let stand 5 minutes, pressing down occasionally. Cut each slice diagonally into 2 triangles.

Place flour in a shallow dish and dredge tofu triangles in flour.

Heat oil in a non-stick skillet over medium high heat. Add tofu and saute 3 minutes on each side. Set aside and keep warm.

Add onion to the pan and saute 4 minutes. Add spices and saute an additional minute.

Add tomato, cilantro and sugar and saute for 2 minutes.

Add water and vinegar. Bring to a boil, scraping pan to loosen browned bits and cook an additional 2 minutes.

Serve onion sauce over tofu.
