Baked Salmon Lemon Thyme

Here's what you need:

1/4 cup fresh minced parsley
3 Tbsp. Parmesan cheese, grated
1/8 cup fresh thyme (or 2 Tbsp. dried)
1 tsp. lemon zest
1/4 tsp. salt

3 small garlic cloves, minced
1/2 cup breadcrumbs
4 Tbsp. butter
1 lb. Salmon filet
Parsley mayonnaise (recipe follows)


Here's how to make it:

Preheat oven to 350°.

Place the parsley, Parmesan, thyme, lemon zest, salt and garlic in a medium bowl. Add the breadcrumbs and stir to combine. Toss breadcrumb mixture with 3 Tbsp. melted butter.

Rinse the salmon and pat dry. Generously butter a shallow baking pan large enough to hold the salmon. Place salmon in prepared pan. Brush with 1 Tbsp. melted butter. Cover with breadcrumb mixture.

Bake for 20 minutes until salmon is just cooked through. Serve with Spiced Parsley Mayonnaise.

Spiced Parsley Mayonnaise

1 1/4 Tbsp. fresh parsley, minced
1 1/4 Tbsp. cilantro, minced
1 Tbsp. green onion, minced
1/2 Tbsp. red wine vinegar
1 garlic clove, minced
1/8 tsp. dried oregano
1/8 tsp. black pepper
1/4 cup mayonnaise
a few dashes of cayenne pepper

Combine all ingredients and store in the refrigerator until ready to use.
