Here's what
you need:
Place the parsley, Parmesan, thyme, lemon zest, salt and garlic in a medium bowl. Add the breadcrumbs and stir to combine. Toss breadcrumb mixture with 3 Tbsp. melted butter. Rinse the salmon and pat dry. Generously butter a shallow baking pan large enough to hold the salmon. Place salmon in prepared pan. Brush with 1 Tbsp. melted butter. Cover with breadcrumb mixture. Bake for 20 minutes until salmon is just cooked through. Serve with Spiced Parsley Mayonnaise. Spiced Parsley Mayonnaise 1 1/4 Tbsp. fresh parsley, minced Combine all ingredients and store in the refrigerator until ready to use. |
